A few weeks later I ordered a very bad version at a different bar. I winced as I watched the bartender pour approximately 4 tablespoons of heavy cream into the shaker. The one from Bennu didn't have any cream, but it tasted like pie.
It was magical.
And I was determined to replicate it.
I started with purchasing KeKe Beach Key Lime Cream Liqueur. I am not a big liquor drinker, and we don't have much liquor in the house, aside from your basic rum-vodka-whiskey. It seemed silly to buy this specialty liqueur for one drink. Especially since I am nearly certain it is artificially colored. But I deemed it necessary in order to to reproduce this martini. I also found some other delicious recipes using KeKe Beach on the website. It will last you six months in the fridge. If you don't make too may of these martinis....
I wanted a martini that wasn't overly sweet or creamy. These ingredients were the winning combination:
Key Lime Pie Martini
- 2-3 ounces vanilla vodka
- 1.5 ounces pineapple juice
- juice of half a lime
- 1 ounce KeKe Beach *
- splash of club soda (optional- if you like a strong martini, omit)
- wedge of lime
Then try not to chug. I dare ya.
Optionally, you could take a wedge of lime and rub it on the rim of the glass. Then dip glass into graham cracker crumbs. This is how the one at Bennu was served. I will be buying graham crackers the next time I am at the grocery store.

*If you don't want to purchase this liquor to make this drink, I would double the lime juice, and add a splash of cream for similar results. You could also make this a mocktail by doing the same and then substituting the vanilla vodka for vanilla seltzer.
