A Different Kind of Frozen Dinner

Sometimes, on a Sunday in the middle of August, when you don't feel like cooking, it is ok to have a frozen dinner.
I don't mean the 'remove from freezer, peel back film and stick in microwave kind'. (But those work in a pinch, too).
I mean a different kind of frozen dinner.


Last night for dinner I had Coconut Almond Chocolate Chip ice cream. Jerry had soft serve blueberry custard.
And I'm ok with that.
As this is a healthy living blog, I am certainly not encouraging you to eat ice cream for dinner on a regular basis. But part of being healthy is being happy. And if eating ice cream in the summer makes you as happy as it makes me, then I am all for it.
Just make sure it is usually your dessert  :)

Yesterday (after Jerry won another road race!), we had a big Sunday dinner at his parent's farm. His mom made roasted chicken and tons of fresh vegetables from their garden. They sent us home with three bags of vegetables. Cauliflower, eggplant, green onion, and red chard.


Not pictured are zucchini, potatoes, green beans, and beet greens (attached to little baby beets!). Plus we still have all those vegetables from the farmer's market on Saturday. I'm not sure how two people are going to eat all of this fresh produce, but I am willing to give it my best shot!

On the exercise front, today is my last TurboKick class for the summer. I'm still deciding what to add in as my cross training after this week.
My running plan calls 14 miles this week. I'm thinking:
Tuesday: 4 miles
Thursday: 3 miles
Saturday: 7 miles

I'll also throw in a BodyPump class either Tuesday or Thursday.
